Ingredients:
- 200g cottage cheese
- 2 tbsp Greek yoghurt
- 2 tbsp whipped cream cheese
- 2-3 tbsp of Cashew Coconut Butter
- Zest of 1 lemon
- 1–2 tbsp lemon juice (to taste)
- 4–6 crushed digestive or graham crackers (or granola for a healthier twist)
Instructions:
- Prepare the base: Crush digestive/graham crackers (or granola) until it’s small pieces.
- Blend the base: In a blender or food processor, blend cottage cheese until it’s smooth. Add greek yoghurt, whipped cream cheese, cashew coconut butter, lemon juice, and lemon zest, blend it again until smooth and creamy.
- Prep the jars: In two clean jars, add a spoonful of crushed crackers to form the base layer.
- Layer it up: Spoon in a generous layer of the lemon cheesecake mixture. Repeat the layers if your jar allows—crackers, then cream.
- Top and serve: Garnish with extra crushed crackers/granola and lemon zest (You can add berries too). Leave it in the fridge for at least 1 hour before serving.
